In search for a rearing program which optimized taste and texture and treated our chickens with the highest respect, we came across a French program known as Label Rouge. The Label system is a highly codified program which specifies the entire rearing cycle. Under the Label system chickens are slow grown with mandatory outdoor experience. They even specify the number of square feet, shade, ground cover in addition to age, feed quality, humane treatment and so on.
We liked the Label system so much that we adopted it. We can't call our product Label Rouge just like California Cabernet Sauvignon producers can't call their wines Bordeaux, because it refers to a specific region.
