Today's white feathered chicken reaches market weight at 46 days of age. These are young chickens. If you tried to grow them out to 3 months of age to get taste, they would weigh 15 lbs. Our job was to find a breed of chicken which was slow growing. Pollo Rosso's are slow grown for a period of up to 65 days for their exquisite taste and texture.
