To produce a chicken which tastes like chicken and not the sauce you put on it, you need to have age. The older the chicken, the greater the taste. Today's white feathered chicken reaches market weight at 46 days of age. These are young chickens. If you tried to grow them out to 3 months of age to get taste, they would weigh 15 lbs. Our job was to find a breed of chicken which was slow growing.
Pollo Rosso's are slow grown for a period of up to 65 days for their exquisite taste and texture.
