The conventional chicken sold in a supermarket has been bred to have an unnatural amount of breast meat. Why? Because Americans will pay a premium for breast meat. We like white meat. Now this is a perfectly fine attribute if the producer never expects the chicken to leave the environmentally perfect, controlled atmosphere of a modern chicken house. If you honestly expect your chicken to go outside to eat grass and chase bugs, you need a chicken which has not been bred to live in a 20,000 square foot chicken house. We expect our chickens to run around the yard. Heck, our chickens can FLY! Therefore, the Pollo Rosso has a breast which is in natural proportion to the rest of the body. This is not a Hollywood chicken, it's a Pennsylvania chicken.
